Oven Fried Chicken

Ingredients:
Pack of chicken (whatever pieces you like, I used chicken tenders)
1 cup flour
Black pepper
Garlic powder
Tony's (creole seasoning)
Cayenne Pepper
1/2 cup butter
Salt
Directions:
1.  Preheat oven to 425degrees.  Pat chicken dry, then sprinkle with garlic powder and Tony's.






2.  In a plastic bag, combine flour, salt, Tony's, cayenne pepper, and mix well.
3.  Shake chicken in the bag full of flour and seasoning. 
4. Line a 9x13 pan with foil. Add butter to the pan and put in the oven until butter melts and sizzles. 







5.  Put chicken in the pan, skin down if your chicken has skin, and bake for 30 mins.  Turn chicken, lower heat to 325degrees and bake for another 30 mins or until done. 
Mashed Potatoes:
Ingredients:
Potatoes (I usually use one large potato per person + 1 or 2)
Milk
Salt & Pepper
Butter
Directions:
1.  Peel potatoes, rinse, and put in pot to boil.  Boil potatoes until they are tender.
2.  Drain potatoes. 
3.  Add butter, salt and pepper to taste.  Mix with an electrix mixer, adding small amounts of milk as you go until the potatoes are the consistency you like. 
Now, make some GRAVY!
